Jerry's Spaghetti Sauce

Ingredients:

1 lb. lean ground beef ( or substitute soy crumples )
1 1/2 tsp. ground pepper
1 1/2 tsp. curry powder
1 1/2 tsp. chili powder
3-4 medium onions, chopped
1 bunch scallions, separate white from greens & chop
3-4 green peppers, chopped (alternate zucchini, chopped)
4 - 14 1/2 oz. cans of Italian stewed tomatoes
4 - 14 1/2 oz. cans of tomato sauce
4 - 6 oz. cans of tomato paste
3 Tsp. of chopped sweet basil (dried)
6 bay leaves

Instructions:

  • Brown ground beef and drain off fat.
  • Keep on low heat and add ground pepper, curry powder and chili powder. Mix well.
  • Add onions and scallion whites. Mix well and cover. Cook on medium-low heat until onions are soft.
  • Add Italian stewed tomatoes, chopped sweet basil and bay leaves. Mix well and cover and heat until mixture starts to bubble.
  • Add tomato sauce and tomato paste. Cover and heat until mixture starts to bubble. Be careful that mixture does not burn when heating.
  • Mix in green peppers and scallion greens. Cover and heat an additional 5 minutes on low heat.
  • Remove from heat & serve.

Makes about 30 servings.
