Potatoes with Lemon

Serves 6.

Ingredients:

  • 1 1/2 lbs. potatoes, evenly sized and scrubbed
  • 3 T. butter
  • grated rind of 1 lemon
  • sea salt
  • freshly ground pepper

Directions:

  1. Preheat oven to 375 degrees
  2. Put potatoes in saucepan, cover with water and parboil for 7 minutes or until they are almost tender.
  3. With a sharp knife, remove he skins and cut the potatoes n half lengthways.
  4. Melt the butter, then stir in the grated lemon rind.
  5. Brush the lemon butter all over the potatoes then put them in a single layer into a baking pan.
  6. Bake for about 45 minutes, or until they are golden and crisp, turning them over about half way through so they get evenly browned.
