Hulled Barley

Some cookbooks suggest presoaking hulled barley.  Hulled barley takes longer to cook than pearl barley.  Can be cooked in pressure cooker for about 20 minutes.

Ingredients:

  • 2 1/2 cups water   (more if not using a "flame tamer"
  • 3/4 tsp salt
  • 1 c. whole hulled barley (light brown or black)
  • 1 tsp mild vegetable oil
  • cooking spray 

Instructions:

1. Spray a pressure-cooker pot with cooking spray.  Add the water and salt and bring to a boil.

2.   Place the barley in a sieve and rinse well.  When the water is boiling hard, add the rinsed barley and the oil.  Return to a rapid boil.

3. Lock the lid down and bring to high pressure, then lower the heat.  Cook for about 40 minutes (but only 20 minutes if will be cooked further with other ingredients).

4.  Allow the pot to sit for about 10 minutes to naturally release the pressure.  Finish cooling under cold water and then unlock the lid.
