Matzoh Balls

Ingredients:

  • 2 tbsp vegetable oil
  • 2 eggs, large (slightly beaten)
  • ½ cup matzoh meal
  • 2 tbsp vegetable broth (can use water)
  • 1 tsp salt

Instructions:

  1. In a bowl, beat egss; add oil, matzoh meal and salt.  Blend together.  Add broth or water and mix until uniform.
  2. Cover and chill in refrigerator for about 20 minutes.  In the meantime, bring 6 cups of salted water to a brisk boil.
  3. Remove chilled matzoh ball mixture from refrigerator.  Wet hands and form batter into balls - approximately 1 inch in diameter.
  4. Reduce heat on boiling water.  Add matzo balls to pot
  5. Cover tightly and simmer until thoroughly cooked, about 30 - 40 minutes

Matzoh balls will expand while cooking, but will shrink back down.

Add to preheated vegetable or chicken broth and serve.

Make about 8 matzoh balls.
