Mango Avocado Pasta Salad

Ingredients:

  • ¼ cup olive oil
  • ¼ cup lime juice (fresh)
  • 1 tbsp honey
  • ½ tsp salt
  • 1 mango (large, peeled, pitted and chopped)
  • 1 avocado (large, cubed)
  • ¼ cup red onion (diced)
  • ¼ cup red pepper (diced)
  • 8 oz spiral pasta (whole wheat)
  • ½ cup fresh basil leaf (slivered)
  • ½ cup cashews (roasted, coarsely chopped)

Instructions:

Put on a pot of water for cooking the pasta, and add a large pinch of salt. In a large bowl, combine the olive oil, lime juice, honey and salt. Whisk to mix. Add the mango, avocado, red onion and red pepper. Cook the pasta according to package instructions, about 10 minutes, then rinse and drain. Add the pasta to the bowl; toss to coat and mix well. Mix in the basil (or parsley or spinach) and top with cashews.

if fresh basil is not available, you can substitute parsley, fresh spinach or arugula.
