Savory Okara Pancake

Ingredients:

pancake

  • 1 egg, large
  • 2 oz fresh okara
  • 2 Green onion (chopped finely (2 - 3))
  • 2 oz all-purpose flour
  • 3½ oz soy milk ((75 to 100 g))
  • 2 pinches salt
  • ⅛ tsp black pepper (freshly ground)
  • ½ tsp sesame oil
  • 2 tbsp cooking oil

Dipping Sauce

  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce (Japanese)
  • ½ tsp sesame oil
  • ½ tsp sesame seed (toasted)
  • ⅛ tsp red pepper flake (optional)

Instructions:

  1. Whisk egg, okara and chopped green onion together in a mixing bowl. 
  2. Whisk in flour, followed by soy milk to make a thick pancake consistency.
  3. Stir in salt, black peper and sesame oil.
  4. Heat a 10" non-stick pan over medium-low heat. 
  5. Add 1 T oil and pour in batter
  6. Cook for 4 to 5 minutes until golden brown on the bottom.
  7. Flip the pancake, add more oil if necessary, and cook another 4 to 5 minutes
  8. Slide the pancake onto a serving plate, cut into wedges and serve with the dipping sauce (or jam)

Dipping sauce: just whisk together all of the ingredients

Notes:

1) okara is the solids left over from making soy milk

2) for all ingredients that say 2 oz, original recipe says 50 g.  (2 oz is 56 g)
