Potato and Lentil Dahl with Spinach

Ingredients:

  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 garlic cloves (minced)
  • fresh ginger (2 cm, minced)
  • 4 potatoes (medium, cubed)
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • ¼ tsp cardamon
  • ¼ tsp cinnamon
  • 1 cup red lentils
  • 2½ cups water
  • ¼ cup raisins
  • 1 tsp salt
  • ½ lemon (juiced)
  • 2 cups spinach
  • garam masala (to serve)

Instructions:

  1. In a large saucepan, fry the chopped onion in the coconut oil until they are starting to brown.
  2. Stir in the garlic and ginger, cook for another minute.
  3. Add the spices: cumin, turmeric, coriander, cardamon, cinnamon, cayenne pepper. Stir and fry for another minute.
  4. Add the cubed potato, red lentils, water, raisins and salt.
  5. Seal the pressure cooker lid and bring up to high pressure.
  6. Pressure cook for 5 minutes, then take off the heat and let pressure release naturally.
  7. Stir in the spinach and lemon juice. Let sit for a couple of minutes before serving.

Note: You can substitute all the spices with a 4 tsp of curry powder.
