Swiss Chard with Lemon, Quinoa, Capers and Olives

Ingredients:

  • 9 oz Swiss Chard (After removing stems)
  • 4½ tbsp olive oil
  • 2 tbsp capers
  • 6 black olives
  • 4 garlic cloves (large)
  • 3 tbsp Italian parsley
  • 1 cup quinoa
  • 1 tbsp lemon juice
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • parmesan cheese

Instructions:

  1. Toast and then cook the quinoa with 2 cups water and 1/2 tsp salt.
  2. Remove the leaves of the Swiss chard from the central stems and thinly slice the stems. Stack the leaves and slice into 2-inch wide pieces.
  3. Heat the 3 tbsp olive oil in a large sauté pan and add the stems Cook for 5 - 7 minutes or until they soften and begin to crisp. Add the capers, olives, and garlic, and cook for another minute. Add the parsley and cook for another minute. Add the chard leaves and cook until partially wilted.
  4. Add 1 1/2 tbsp olive oil, lemon juice, salt and pepper.
  5. Add the cooked quinoa and toss and cook for 2 - 3 minutes. 
  6. Top with a sprinkling of cheese.
