Red Lentil and Carrot Soup with Yogurt

Ingredients:

  • 1 tbsp olive oil
  • 2 carrot
  • 1 onion (medium)
  • 5 cups vegetable broth
  • 1 cup soy yogurt
  • 1 cup red lentil
  • 1 garlic clover
  • lemon juice (or lime)

Instructions:

1. Saute the onions for just a few minutes in the olive oil.

2. Add the carrots and garlic.  Saute a few more minutes.  Nothing needs to be fully cooked at this stage.

3. Add the lentils and stir to coat them with oil.  Presumbly this opens their pores.

4. Add the vegatable broth and yogurt.

5. Simmer for 15 to 20 minutes.

6. Season with about 1 tsp salt and 1/4 tsp pepper

7. Blend using an immersion blender.  OK for the carrots not to be fully broken up.

8. Add lemon (or lime) juice.  Stir and serve.
