soy ricotta cheese

Ingredients:

  • 2 cups soy whey
  • 2 quarts soy milk

Instructions:

  1. combine soy whey and soy milk
  2. heat to ???   . 
  3. curds should form as the mixture cools
  4. strain
  5. store in refrigerator

yield:  1 1/4 cups ricotta cheese

note:  original recipe is for using dairy milk
