Quinoa Salad

1.5 cups Quinoa
5 scallions
5 Tbsp fresh lemon juice
2 Tbsp virgin olive oil
3.5 oz chopped cashews
2.5 oz cranberry pieces

Thoroughly rinse uncooked quinoa with cold water. Cook over low heat with 3 cups water until water is absorbed (15-20 minutes). Finely chop scallions, cashews and cranberry pieces. Mix with cooked quinoa and add oil and lemon juice. Mix. Refrigerate before serving.
