Pumpkin Waffles

from Vegan with a Vengeance by Isa Chandra Moskowitz

  • 2 1/2 c flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg (ground or freshly grated)
  • 1/4 tsp ground cloves
  • 2 c rice or soy milk
  • 1 15 oz can pureed pumpkin
  • 1/3 c oil
  • 1/3 c brown sugar
  • 2 tsp vanilla extract
  1. Preheat waffle iron
  2. Sift together dry ingredients, except brown sugar.
  3. In a separate bowl, combine the liquid ingredients and brown sugar. Whisk together vigorously until emulsified.
  4. Pour the wet ingredients into the dry and mix.
  5. Prepare the waffles according to mfr instructions.
