Curried Split Pea Soup

  • 1 Tbs olive oil
  • 1 medium white onion, cut into 1/4 inch dice
  • 3 cloves garlic, minced
  • 2 Tbs fresh ginger, minced
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cardamon
  • generous pinch of cinnamon
  • 2 tsp salt
  • 8 c water
  • 1 lb. split peas
  • 1 carrot
  • fresh cilantro for garnish (optional)
  1. Saute onion in olive oil for about 5 mintes.
  2. Add garlic, ginger, spices and salt.  Saute additional 2 minutes.
  3. Add water and stir well.
  4. Add split peas.  Cover and bring to a boil.
  5. Reduce heat and simmer for about 1 hr, until peas are tender
  6. Blend soup with an immersion blender
  7. Grate in  carrot and serve. (Or add carrot slices towards end of cooking)
  8. Garnish with cilantro
