Three-Cheese Kale Orzo Bake

1 cup orzo

1 cup marinara sauce (no pieces)

½ cup grate3d parmesan cheese

10 oz cooked Kale, drained to dryness

2 eggs, lightly beaten

½ cup low fat ricotta cheese

Pepper to taste

¼ tsp ground nutmeg

½ cup 4-cheese blend

 

Preheat oven to 375 degrees. Lightly coat 9” glass pie plate with non-stick spray oil.

Bring a large pot of salted water to a boil over medium heat. Add the orzo and cook until al dente. Drain and transfer to a medium bowl. Add ½ cup of pasta sauce and the parmesan cheese. Spread the mixture in the prepared pie plate.

In a medium bowl, add the kale, eggs, ricotta, nutmeg, and pepper to taste .and stir to combine. Spoon the mixture evenly to cover all the pasta. Top with the remaining ½ cup of the pasta sauce and sprinkle with 4-cheese blend. Bake for 30 minutes or until the cheese is slightly melted. Serve hot.
