Harira (vegan)

Ingredients:

  • 2 tbsp olive oil
  • 1 Onion, large
  • 1¼ tbsp fresh ginger
  • ½ tbsp cumin
  • ½ tsp tumeric
  • 1 tsp cinnamon
  • ¾ tsp coriander
  • 14 oz canned diced tomato
  • 8 cups water
  • 2 cups red lentil (washed)
  • 2 tsp black pepper
  • ½ tsp fennel, ground
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 cups garbanzo beans (cooked)
  • ¼ bunch flat-leaf parsley
  • ¼ bunch cilantro
  • lemon zest (from ¼ of a lemon)
  • 2 lemon (juice only)

Instructions:

  1. Sautee onions in oil
  2. Add remaining ingredients up to (not including) the garbanzo beans. Continue sauteeing
  3. Bring to a high boil, then reduce to a simmer and add the remaining ingredients
