Kale with potatoes and onions

Everything is approximate.

Ingreedients:

  • 1 lb kale, rinsed and dried
  • 3/4 lb red potatoes, washed but skin on; cut into 1/4" slices.
  • 1 c. onion, chopped
  • few cloves garlic, minced or chopped
  • oil for sauteing

Directions:

  1. Cut leaves of kale away from stem.  Cut the stems into 1" segments.  Cut the kale into large pieces.
  2. Steam the potatoes briefly (1 - 2 minutes - should still be firm).
  3. Saute onion, potato and kale stems until onion is tender and potato is starting to brown.  We do this in the wok, but good saute pan is fine.
  4. Add garlic and continue sauteing for another minute.
  5. Add the kale and a little salt.  Cook until the kale is wilted.
