Potatoes with Lemon

Serves 6.
Ingredients:
- 1 1/2 lbs. potatoes, evenly sized and scrubbed
- 3 T. butter
- grated rind of 1 lemon
- sea salt
- freshly ground pepper
Directions:
- Preheat oven to 375 degrees
- Put potatoes in saucepan, cover with water and parboil for 7 minutes or until they are almost tender.
- With a sharp knife, remove he skins and cut the potatoes n half lengthways.
- Melt the butter, then stir in the grated lemon rind.
- Brush the lemon butter all over the potatoes then put them in a single layer into a baking pan.
- Bake for about 45 minutes, or until they are golden and crisp, turning them over about half way through so they get evenly browned.
