Pear and Avocado salad
from "A Vegetarian Christmas" by Rose Elliot; p. 123
Ingredients:
- 2 large ripe comice pears
- 2 large ripe avocados
- juice of 1/2 lemon
- sea salt
- freshly ground black pepper
- 1 1/2 oz (1 1/2 c.) watercress
Instructions:
- Peel and core the pears, then slice them downwards into thin sections. Sprinkle with the lemon juice, salt and pepper.
- Halve and peel the avocados and remove the pits. Cut the avocados, too, into long thin slices.
- Put a few watercress leaves on each plate, then arrange alternate slices of pear and avocado on top.
