Cumin Roasted Sweet Potatoes

Ingredients:
- 2 lbs, 4 oz. sweet potatoes, scrubbed
- 2 cloves garlic
- salt
- 2 T ground cumin
- 2 T olive oil
- 2 T fresh lemon juice
- freshly ground black pepper
Directions:
- Heat the broiler to high.
- Cut the sweet potatoes into walnut sized chunks and arrange on a cookie sheet .
- Chop or grate the garlic, then mix with a large pinch of salt and pound to a paste with the tip of your knife. Mix this paste with the cumin, olive oil, lemon juice and a little pepper; then mix it with the sweet potatoes so that they are all evenly coated.
- Broil for about 10 to 15 minutes, moving the potatoes around after about 5 minutes o they brown evenly. They're done when you can easily get a knife point into one and are tinged brown.
