Cumin Roasted Sweet Potatoes

Ingredients:

  • 2 lbs, 4 oz. sweet potatoes, scrubbed
  • 2 cloves garlic
  • salt
  • 2 T ground cumin
  • 2 T olive oil
  • 2 T fresh lemon juice
  • freshly ground black pepper

Directions:

  1. Heat the broiler to high.
  2. Cut the sweet potatoes into walnut sized chunks and arrange on a cookie sheet .
  3. Chop or grate the garlic, then mix with a large pinch of salt and pound to a paste with the tip of your knife.  Mix this paste with the cumin, olive oil, lemon juice and a little pepper; then mix it with the sweet potatoes so that they are all evenly coated.
  4. Broil for about 10 to 15 minutes, moving the potatoes around after about 5 minutes o they brown evenly.  They're done when you can easily get a knife point into one and are tinged brown.
