Polenta

Ingredients:

  • 1 cup vegetable broth
  • 3 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup dry polenta (quick cooking)

Instructions:

  1. Bring al ingredients except polenta to a boil.
  2. Slowly add the polenta, stirring with a whisk.
  3. Lower heat and continue stirring until the polenta thickens, about 5 to 10 minutes.
