Polenta
Ingredients:
- 1 cup vegetable broth
- 3 cups water
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 cup dry polenta (quick cooking)
Instructions:
- Bring al ingredients except polenta to a boil.
- Slowly add the polenta, stirring with a whisk.
- Lower heat and continue stirring until the polenta thickens, about 5 to 10 minutes.
