Gisella Sorter's Passover Fladen

Preheat oven to 400°

Crust

1 lb.+ 3 T matzo cake meal
1 lb. sweet butter
1 c less 1 T granulated sugar
6 egg yolks

Fillings

Layer #1

Combine the following ingredients:

1/2 lb. gratred nuts or almonds
confectioners sugar
3 or 4 unbeaten egg whites
grated lemon & orange rind

Layer #2

Cook 3 lb. Macintosh apples with sugar to taste. When finished, put in a sieve and let drip and dry. Add yellow raisins.

Layer #3

l lb.jar of plum butter (Povidel) (jar is usually 15 oz.)
Add a little lemon juice and a little rum.

Instructions

  1. Combine crust  ingredients. (If using food processor, mix 1/2 above ingredients at a time)
  2. Roll dough 1/4" thick. Press firmly to bottom and sides of 9" spring form, reserving enough dough to make a lattice top after filling is put in.
  3. Put nut layer in first, followed by apples, and then the plum butter.
  4. Put lattice top over plum butter. Brush dough with egg yolk (optional)
  5. Bake at 400° for 20 min, then lower heat to 350° and bake additional 30-40 min.
