Hamentashen (from Elaine)
Preheat oven to 375°
1/2 lb. butter
1/2 t. salt
2 t baking powder
1/4 c. sour cream
3 egg yolks
3 c. flour
1/2 c. sugar
1 1/2 t vanilla
Sift together the dry ingredients.
In a food processor add dry ingredients, Cut in butter. Add egg yolks, sour cream and vanilla. Blend. Chill.
Roll (not too thin) and cut into rounds (use large tart cutter.) Fill.
For prune butter -1 t flour and orange rind and cinnamon to jar of Lekvar.
For apricot butter, add a little lemon juice. 1 jar makes 2 dozen small.
For poppy filling, 1/2 cup poppy seeds and enough honey to hold it together
Brush edges with slightly beaten egg, pinch corners tightly.
Bake on greased cookie sheet for 20-25 min.
