Linzer Cookies

Basic Cookie Dough
1/4 lb. sweet butter 1/2 c powdered sugar
grated rind, 1/2 lemon 2 egg yolks (reserve whites for meringue)
1 c all purpose flour

Preheat oven to 350°.

1. Cream butter
2. Add powdered sugar, lemon rind; cream
3. Add egg yolks, beat.
4. Add flour, beat.
5. Pat dough smoothly onto cookie sheet - do not pat to end of cookie sheet as dough spreads. Bake till pale brown, 10-15 min.
6. Meanwhile, prepare meringue

For Meringue

2 egg whites (reserved from egg yolks) 1/3 c very fine sugar
raspberry jam 1/4 t almond flavoring
1 c chopped blanched almonds

1. Beat whites stiff with sugar.
2. Fold in almond flavoring and chopped almonds.

Remove crust from oven, spread crust lightly with raspberry jam, then cover with meringue.
Return to oven, baking till lightly browned, about 10 min.
While warm, cut into diamonds by making lengthwise cuts with a knife, then cut diagonally to form diamonds.
