Tofu mayonnaise

Ingredients:

 

  • 1 12.3-ounce box extra firm silken tofu, drained
  • 3 T. olive oil
  • 2 T. fresh lemon juice or 1 T. cider vinegar
  • 1 1/2 T. agave nectar or honey
  • 1 t. salt, plus more to taste

Directions:

Process the silken tofu, olive oil, lemon juice, agave nectar and salt in a blender until creamy. Place in the refrigerator to chill for one hour
