Tofu Egg Salad****
Ingredients:
- 1 lb Tofu (firm)
- ¼ cup Mayonnaise (Soy)
- 1½ tbsp Dijon Mustard
- 1 tsp horse radish (prepared)
- ¼ tsp turmeric
- 1 tbsp fresh parsley (chopped)
- ½ tbsp dill weed (fresh or dried)
- ¼ cup Green onion (diced, 4-5 stalks)
- 2 stalks celery
- ½ tsp salt
- ¼ tsp pepper
Instructions:
- Drain tofu first
- Cut it into 1/4s, wrap it in paper towels on a cookie sheet, with another one on top, weighted down with some heavy canned goods.
- Let sit in refrigerator for 10-20 minutes.
- Mash the tofu in a bowl with a wooden spoon.
- Mix tofu well with remaining ingredients.
- Chill and serve.
