Tofu Egg Salad****

Ingredients:

  • 1 lb Tofu (firm)
  • ¼ cup Mayonnaise (Soy)
  • 1½ tbsp Dijon Mustard
  • 1 tsp horse radish (prepared)
  • ¼ tsp turmeric
  • 1 tbsp fresh parsley (chopped)
  • ½ tbsp dill weed (fresh or dried)
  • ¼ cup Green onion (diced, 4-5 stalks)
  • 2 stalks celery
  • ½ tsp salt
  • ¼ tsp pepper

Instructions:

  1. Drain tofu first
  2. Cut it into 1/4s, wrap it in paper towels on a cookie sheet, with another one on top, weighted down with some heavy canned goods.
  3. Let sit in refrigerator for 10-20 minutes.
  4. Mash the tofu in a bowl with a wooden spoon.
  5. Mix tofu well with remaining ingredients.
  6. Chill and serve.
