Potato Pancake
Ingredients:
- 1½ potatoes (with skins, quartered)
- 1 onion
- 2 eggs
- 2 tsp white flour, unbleached
- ¼ tsp baking powder
- 1 tsp salt
- ⅛ tsp black pepper
- vegetable oil (canola or peanut)
Instructions:

- Using shredding blade, shred the potato (and onion?)
- Replace with chopping blade, add eggs, flour, salt and pepper. Process until blended
- In lectric fry pan, heat oil over medium heat. Drop a tablespoon of potato mixture into hot oil. Spread out with back of spoon. Cook first side until browned, and then flip and cook the other side.
- Drain on paper towels

- substitute 1 1/4 lbs zucchini for the ???
