Potato Pancake

Ingredients:

  • 1½ potatoes (with skins, quartered)
  • 1 onion
  • 2 eggs
  • 2 tsp white flour, unbleached
  • ¼ tsp baking powder
  • 1 tsp salt
  • ⅛ tsp black pepper
  • vegetable oil (canola or peanut)

Instructions:

  1. Using shredding blade, shred the potato (and onion?)
  2. Replace with chopping blade, add eggs, flour, salt and pepper.  Process until blended
  3. In lectric fry pan, heat oil over medium heat.  Drop a tablespoon of potato mixture into hot oil.  Spread out with back of spoon.  Cook first side until browned, and then flip and cook the other side.
  4. Drain on paper towels

Variations

  • substitute 1 1/4 lbs zucchini for the ???
