Easy Quinoia Salad
Ingredients:
- 2¼ lb Costco quinoa Salad (In the fresh prepared foods section)
- 2 cups quinoa (dry grain)
- 6 tbsp lemon juice (fresh)
- 3 tbsp olive oil, extra virgin
- 1 tsp sea salt
Instructions:
- Rinse dry quinoa thoroughly in cold water.
- Drain quinoa and place in a heavy skillet.
- Toast the quinoa. Use medium heat. This will take between 5 and 10 minutes. Keep turning the quinoa until you hear it cracking and see the grains skittle along the surface. Remove from heat.
- Place quinoa and salt in a 4 qt pot with 4 cups water.
- Bring to a boil and then cover and turn off heat.
- When quinoa has cooled, place it in a large mixing bowl.
- Add prepared quinoa salad, olive oil, and lemon juice.
- Mix thououghly and then refrigerate.
- Serve cold.
