Easy Quinoia Salad

Ingredients:

  • 2¼ lb Costco quinoa Salad (In the fresh prepared foods section)
  • 2 cups quinoa (dry grain)
  • 6 tbsp lemon juice (fresh)
  • 3 tbsp olive oil, extra virgin
  • 1 tsp sea salt

Instructions:

  1. Rinse dry quinoa thoroughly in cold water.
  2. Drain quinoa and place in a heavy skillet. 
  3. Toast the quinoa.  Use medium heat.   This will take between 5 and 10 minutes.  Keep turning the quinoa until you hear it cracking and see the grains skittle along the surface.  Remove from heat.
  4. Place quinoa and salt in a 4 qt pot with 4 cups water.
  5. Bring to a boil and then cover and turn off heat.
  6. When quinoa has cooled, place it in a large mixing bowl.
  7. Add prepared quinoa salad, olive oil, and lemon juice.
  8. Mix thououghly and then refrigerate.
  9. Serve cold.
