3 Bean Quinoa Salad

Ingredients:

  • 2 cups quinoa (cooked)
  • 14 oz black beans (canned)
  • 14 oz canned kidney beans
  • 14 oz chickpeas, cooked
  • ½ cup red onion (diced)
  • ½ yellow bell pepper (diced)
  • ½ red bell pepper (diced)
  • 2 stalks celery (diced)
  • ¼ cup cilantro (chopped)
  • 2 tbsp fresh parsley (chopped)
  • ⅓ cup red wine vinegar
  • 3 tbsp olive oil, extra virgin
  • salt and pepper (to taste)

Instructions:

  1. In a large bowl, combine quinoa, rinsed and drained beans, onion, peppers, celery, and herbs.
  2. In a small bowl, whisk together vinegar, olive oil, salt and pepper. Add to bean mixture and stir to coat.
  3. Store covered in the refrigerator until ready to serve.
