Mushroom Wheat Berry Pilaf
Ingredients:
- 1 tbsp olive oil
- 2 tbsp butter
- 2 medium onions (halved and thinly sliced)
- 1¼ lb portobello mushrooms (chopped into ¾" chunks (+/- ¼ lb))
- 2 tsp thyme leaf, dried
- 1¼ cup wheat berries (precooked 30 min in pressure cooker)
- ½ cup water
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 bunch mustard greens
Instructions:
Place large heavy pot over medium heat. Add oil and butter. When butter melts, swirl to coat bottom of pan. Toss in onions and cook until translucent (~5 min). Add mushrooms and thyme and cook, stirring occasionally, until mushrooms are soft (~5 min). Add wheat berries and stir; then add water and bring to a boil, and cook for 3-4 minutes.
Add mustard greens and cook until thy are wilted. Taste, adjusting salt if necessary, and add generous grind of pepper. Serve hot.
