Kugel
Ingredients:12 - 16 oz broad egg noodles
1 lb. Ricotta Cheese (I use low fat)
1 pt. sour cream (I use low fat)
3 oz. cream cheese
6 eggs
1/2 c. sugar
1/4 lb. butter
1 1/2 tsp. vanilla extract
grated rind from 1 lemon
1/2 tsp salt
1/2 cup raisins (optional)
cinammon & sugar mixture
Instructions:
1. Boil noodles according to package instructions. Drain.
2. Melt butter in pyrex cooking dish (in oven or microwave).
3. Mix remaining ingredients, except sugar & cinammon.
4. Add melted butter to mixture.
5. Mix batter with noodles.
6. Poor into pyrex dish.
7. Sprinkle with cinammon and sugar
8. Bake at 325 - 350 degrees for 1 hour
Can be eaten hot or cold. To freeze, cut into portions and wrap with plastic wrap.
