Onion Mushroom Potato Kugel

2 1/2 lbs red potatoes, quartered with skins on
3/4 tsp salt
3 T olive oil
2 medium onions, chopped
1/2 lb small mushrooms, quartered
1/2 tsp peppter
1/4 c. vegetable broth
2 large eggs, beaten
1/2 tsp paprika

 

1. Preheat oven to 350 degrees
2. Place potatoes in a large pot; cover with salted water; bring to a boil, then cover and simmer until tender (about 20 mintues). Roughly mash potatoes. Season with salt and pepper. Stir in broth, then add beaten eggs and mix.
3. Saute onions over medium heat until lightly browned (about 7 minutes)
4. Add mushrooms; saute until browned.
5. Mix potatoes with onion-mushroom mixture.
6. Spoon into a greased 8x8 glass dish.
7. Sprinkle with paprika
8. Bake until top is firm and light golden at edges (about 50 minutes)
