Ginger-Pear Waffles

- 2 c flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp ground or freshly grated nutmeg
- 1 c pear or apple juice
- 3/4 c soy milk
- 1/3 c applesauce
- 2 Tbs canola oil
- 4 Tbs sugar
- 2 tsp vanilla extract
- 1 bosc pear, grated (preferable under-ripe)
- Preheat wffle iron
- Sift together dry ingredients (except sugar) into a large mixing bowl.
- In a medium bowl, mix together juice, soy mile, applesauce, oil, sugar and vanilla until well combined.
- Create a well in the center of the flour mixture and slowly blend the wet ingredients into the dry until combined.
- Fold in the grated pear.
- Make waffles according to instructions on waffle iron.
