Curried Split Pea Soup
- 1 Tbs olive oil
- 1 medium white onion, cut into 1/4 inch dice
- 3 cloves garlic, minced
- 2 Tbs fresh ginger, minced
- 2 tsp curry powder
- 1 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp ground cardamon
- generous pinch of cinnamon
- 2 tsp salt
- 8 c water
- 1 lb. split peas
- 1 carrot
- fresh cilantro for garnish (optional)
- Saute onion in olive oil for about 5 mintes.
- Add garlic, ginger, spices and salt. Saute additional 2 minutes.
- Add water and stir well.
- Add split peas. Cover and bring to a boil.
- Reduce heat and simmer for about 1 hr, until peas are tender
- Blend soup with an immersion blender
- Grate in carrot and serve. (Or add carrot slices towards end of cooking)
- Garnish with cilantro
