Passover Potato Kugel

Serves 6-7

• 2 1/2 lbs. white potatoes, peeled, and grated (Cusinart - transfer immediately into bowl of cold water
• 1 large onion, grated in Cuisinart
• 1 large (or 2 medium) carrot, grated in Cuisinart
• 1/4 c matzo meal
• 2 t salt
• 1/4 t pepper
• 1/4 c cooking oil
• 2 large eggs, beaten

1. Preheat oven to 375°
2. Beat eggs in Cuisinart, add oil , salt, pepper and matzo meal.
3. Drain potatoes, and combine in Cuisinart with grated carrot, onion and egg mixture.
4. Pour into well-greased 1 1/4 qt. baking dish and bake 1 1/4 hours or into individual greased muffin pans (makes 12 medium size) and bake 45 min.

Can be reheated in microwave.
