Bea Harris' Lemon Custard Souffle Pie
Ingredients:
- 3 large eggs, separated
- 7 Tbsp lemon juice
- 1/2 + 1/4 cup sugar
- 1 baked 8-9" pie shell
Instructions:
Preheat oven to 350 degrees.
Combine egg yolks , 1/2 C sugar and lemon juice in small pot. Stir continously with wire whisk on very low heat until mixture thickens. Do not allow to boil or cool.
Beat egg whites with a pinch of salt. When foamy add the remaining 1/4 C sugar and beat until they form a soft peak. Fold into yolk mixture and pour into baked shell.
Bake for 15-20 minutes until top is lightly browned.
