Harira (vegan)
Ingredients:
- 2 tbsp olive oil
- 1 Onion, large
- 1¼ tbsp fresh ginger
- ½ tbsp cumin
- ½ tsp tumeric
- 1 tsp cinnamon
- ¾ tsp coriander
- 14 oz canned diced tomato
- 8 cups water
- 2 cups red lentil (washed)
- 2 tsp black pepper
- ½ tsp fennel, ground
- 2 cinnamon sticks
- 2 bay leaves
- 2 cups garbanzo beans (cooked)
- ¼ bunch flat-leaf parsley
- ¼ bunch cilantro
- lemon zest (from ¼ of a lemon)
- 2 lemon (juice only)
Instructions:
- Sautee onions in oil
- Add remaining ingredients up to (not including) the garbanzo beans. Continue sauteeing
- Bring to a high boil, then reduce to a simmer and add the remaining ingredients
