Kale with potatoes and onions
Everything is approximate.
Ingreedients:
- 1 lb kale, rinsed and dried
- 3/4 lb red potatoes, washed but skin on; cut into 1/4" slices.
- 1 c. onion, chopped
- few cloves garlic, minced or chopped
- oil for sauteing
Directions:
- Cut leaves of kale away from stem. Cut the stems into 1" segments. Cut the kale into large pieces.
- Steam the potatoes briefly (1 - 2 minutes - should still be firm).
- Saute onion, potato and kale stems until onion is tender and potato is starting to brown. We do this in the wok, but good saute pan is fine.
- Add garlic and continue sauteing for another minute.
- Add the kale and a little salt. Cook until the kale is wilted.
